The N.C. Cooperative Extension will hold a free basic canning class from 10 a.m. to noon on Wednesday for people who want to preserve fresh vegetables.

Using proper canning methods is extremely important to prevent the growth of the C. Botulinum bacteria, which causes botulism, organizers said.

The class will offer instruction on canning and research-based recipes. Participants may bring dial gauge pressure canners to be tested for accuracy.

The class is free but participants must register with Taneisha Armstrong at tsarmstr@ncsu.edu or 252-902-1714.
