Copper & Vine bar manager Shawn Batts, 35, shared with mixer his recipe for a spring-time refreshing Blueberry Mojito.

 

Ingredients

Fresh blueberries

Fresh mint

 1/2 ounce fresh lime juice

 1/2 ounce simple syrup (recipe at the end)

 3/4 light rum

 3/4 dark rum

Ice

In a tall glass add 8 to 10 fresh blueberries, 5 to 7 fresh mint leaves, lime juice and simple syrup. Crush the leaves and berries with a muddler, if you have one, or a spoon.

“You want to bruise the leaves to bring out the oils and leave the blueberries a little juicy,” Batts said. “Fresh is better. We try to mirror what the kitchen does and they do all fresh ingredients.”

After muddling the mint and blueberries, fill the glass half way full of ice.

Pour  3/4 ounce of light rum and a  3/4 ounce dark rum over the ice, finish with club soda and mix.

Batts did say that frozen berries could be used, but just be sure to unthaw them first.

Copper & Vine also offers a signature drink called the Lemon Basil Crush, with pineapple juice, Muscato and St-Germain, a sweet elderberry liquor.

 

Simple Syrup

Mix together equal parts hot or boiling water and sugar. Stir until the sugar is dissolved.
